Hasselback Sweet Potatoes

Ingredients

  • 4-5 small to medium sweet potatoes

  • 1 ½ Tbsp coconut oil, melted

  • ½ clove garlic, minced

  • 2 drops Basil Vitality

  • 2 toothpick swirls Nutmeg Vitality

  • 2 toothpick swirls Cinnamon Bark Vitality

Directions

  1. Preheat oven to 425 F. Cut a small portion off the bottom of each sweet potato, so they sit flat. Then, cut thin slits in the sweet potato ¼ inch from the bottom. Set on a baking sheet.

  2. Mix coconut oil, garlic, and vitality oils. Pour over sweet potatoes, opening the slits to allow mixture to cover as much as possible.

  3. Bake for 40-45 minutes, until sweet potatoes are cooked through. Optional: garnish with fresh parsley, chives, or green onions!

Cauliflower Crust Pizza

INGREDIENTS

  • 1 medium head of cauliflower

  • ¼ teaspoon kosher salt

  • 2 drops Basil Vitality™

  • ½ teaspoon dried oregano

  • ½ teaspoon garlic powder

  • ¼ cup parmesan cheese

  • ¼ cup mozzarella cheese (or vegan / dairy substitute!)

  • 1 egg, whipped

  • Pizza sauce

  • Desired toppings

INSTRUCTIONS 

  • Preheat oven to 450°F.

  • Wash the head of cauliflower and break off all florets.

  • Grind in a food processor until texture becomes rice-like.

  • Place on parchment paper on a baking sheet and roast for 5–8 minutes, watching carefully. You don’t want the cauliflower to brown, just to become soft.

  • Remove from oven and let cool for 5 minutes.

  • Combine cauliflower in a bowl with all the other ingredients. Clean hands mix the best!

  • Place parchment paper on baking sheet and oil it.

  • Pat down the cauliflower mixture until a flat circle.

  • Bake for 8–10 minutes or until golden.

  • Remove from oven and cool.

  • Once cool, evenly spread sauce over dough.

  • Add desired toppings.

  • Cook for 15-20 minutes.

BONUS: For essential oil-infused pizza sauce, blend: 1/3 cup sundried tomatoes, 2 minced garlic cloves, 1/3 cup extra virgin olive oil, 1 medium tomato halved, 2 drops Oregano Vitality™, 2 drops Basil Vitality™, and 1 drop Thyme Vitality™.

Tangerine Burst Chocolate Energy Balls

Prep Time: 10 minutes | Total Time: 15 minutes | Yield: 14

Ingredients

  • 32 pitted dates
  • ½ cup quick oats
  • ¼ cup hemp seeds
  • 2 tablespoons cocoa powder
  • ¼ cup coconut flour
  • 12 drops Tangerine Vitality™ essential oil

Instructions

Process dates in a food processor until they form a thick paste.
Mix in oats, hemp seeds, cocoa powder, coconut flour, and Tangerine Vitality essential oil. The mixture should form a firm dough. Using a medium cookie dough scoop, roll dough into bite-sized balls.  Roll balls in cocoa.  Store in an airtight container. 


Fruit’n’Oats Energy Balls

Prep Time: 10 minutes | Total Time: 15 minutes | Yield: 14

Ingredients

  • 32 apricots
  • 1 cup wolfberries
  • ½ cup oat flour
  • 2 drops Grapefruit Vitality™ essential oil
  • ¼ cup quick oats
  • Process apricots in a food processor until they form a thick paste.

Instructions

Chop wolfberries, add to the apricot mixture, and process. Mix in oat flour, Grapefruit Vitality essential oil, and oats. The mixture should form a firm dough. Using a medium cookie dough scoop, roll into bite-sized balls. Store in an airtight container.


Lemon-Basil Energy Balls

Prep Time: 10 minutes | Total Time: 1 minute | Yield: 14

Ingredients

  • 32 pitted dates
  • ½ cup dried strawberries
  • 2 tablespoons chia seeds
  • ½ cup quick oats
  • 1 drop Basil Vitality™ essential oil
  • 4 drops Lemon Vitality™ essential oil

Instructions

Process dates and strawberries in a food processor until they form a thick paste.
Mix in chia seeds, oats, and Vitality oils. The mixture should form a firm dough.
Using a medium cookie dough scoop, roll into bite-sized balls.  Store in an airtight container.

We can't wait to try out this recipe this weekend! Spinach Pesto Sauce by Young Living Essential Oils — Heat the pine nuts in a skillet until golden brown. Combine with spinach, parmesan cheese, garlic, and about 1/2 cup of olive oil in a food processor and blend until smooth. Pour pesto into a glass or stainless steel bowl and add more olive oil if needed. Stir in the essential oils. —

  • 1 cup parmesan cheese grated
  • 2 tsp minced garlic
  • 1 cup olive oil
  • 1 drop Basil Vitality
  • 1 drop Lemon Vitality
