Christmas is right around the corner, which means sweets and candy canes are everywhere. Skip the added sugar by making these healthier holiday treats, without missing an ounce of the nostalgic flavors of the season!
Dark Chocolate Peppermint Truffles
Ingredients
1 cup medjool dates, pitted
1/2 cup raw walnuts
1/2 cup raw almonds
1/4 cup unsweetened cocoa powder
1 Tbsp coconut oil
2 drops peppermint vitality oil
Directions
Add dates & nuts to a food processor, then pulse until combined. Add the remaining ingredients & mix.
Rub a small amount of coconut oil between your hands. Form the mixture into approximately 14 balls & place on a parchment paper-lined baking sheet. Place in the freezer for 30 minutes, then store in the refrigerator until ready to eat.
YL Guilt Free Peppermint Brownies
Ingredients
1 15-ounce can low-sodium black beans
1/3 cup coconut oil
1/4 cup unsweetened cocoa powder
1/8 teaspoon salt
2 teaspoons vanilla extract
1/2 cup honey
3 eggs
Directions
Preheat oven to 350°F.
Rinse and drain black beans.
Melt coconut oil on stove until clear.
Blend all ingredients except eggs in food processor until smooth.
In a separate bowl, lightly whisk eggs until well beaten.
Fold into chocolate mixture.
Pour mixture into a greased 8x8 pan and bake 25–30 minutes.
Let cool 15 minutes then cut. Let cool another 15 minutes and serve.
Chai-Spiced Chia Seed Pudding
Ingredients:
1/2 c chia seeds
2 c unsweetened almond milk
2 Tbsp pure maple syrup (optional)
1 toothpick swirl Ginger Vitality
1 drop Cinnamon Bark Vitality
Dash ground cardamom
2 large apples
Directions
In a bowl, combine the chia seeds, milk, maple syrup, essential oils, and spices. Separate into four jars. Cover and refrigerate overnight.
When ready to serve, dice the apples and divide evenly on top of the four jars. Serve cold or warmed.
