Start with a skinless whole organic chicken and place it in pot with enough water to cover the chicken.
For flavor, add celery, carrots, garlic and onions and herbs of choice into the pot with the chicken.
Simmer the chicken and veggies 4-5 hours on medium heat if you're using a stove top, or 30-40 minutes if you're using a Instant Pot.

Once it's been cooking for 4-5 hours, you can take the chicken out and pull the meat off the bones and use the meat for another meal.
Then add the bones back and let it slow cook for another couple hours for the broth to soak up even more flavor and minerals from the bones.
When you're ready, strain the broth to help remove any leftover pieces of bone, skin, or foam.
**Handy tip—don't forget sometimes a bag of "giblets" is stuffed into the chicken carcass. Remove it first before cooking.
